Apple Butter Crumble Cake
This warm and spiced loaf tastes just like Fall! It's a great way to use up some extra apples and the perfect pair for a warm cup of coffee!
Ingredients
- 1 cup apple butter* (see notes for homemade recipe)
- 2 cups AP flour
- 1 tbsp. baking powder
- 1 tsp cinnamon
- 1/2 tsp ginger (You can substitute ginger, nutmeg, cardamom, and 1/2 tsp of cinnamon with 1 tsp pumpkin pie spice)
- 1/2 tsp nutmeg
- 1/4 tsp cardamom
- 1/2 tsp salt
- 1/2 cup vegan butter, softened
- 3/4 cup sugar (We used half splenda half cane sugar)
- 2 vegan egg substitutes (2 tbsp. egg replacer + 4 tbsp. water)
- 1/2 cup vegan 'buttermilk' (1/2 cup plant milk + 1 1/2 tsp vinegar)
Optional Streusel
- 1/4 cup vegan butter, melted
- 1/2 cup flour
- 1/2 cup brown sugar
- 1/2 cup chopped pecans
Instructions

- Preheat the oven to 350 degrees Fahrenheit. Line and grease a loaf pan with parchment paper and set aside.
- In a small bowl, prepare the vegan egg substitute and set aside to thicken.
- In a medium bowl, gently whisk together flour, spices, baking powder, and salt.
- In a large bowl, cream together the softened vegan butter and sugar. Then, add the vegan egg replacer and beat into the butter + sugar mixture.
- Add half of the flour mixture to the large bowl and beat until just combined.
- Add the vegan buttermilk and beat until combined.
- Add the remaining half of the flour mixture and beat until just combined.
- Fold in the apple butter.
- Prepare the streusel by combining all of the ingredients in a bowl and mixing until small clumps remain.
- Pour half of the cake batter into the loaf pan followed by half of the streusel mixture. Repeat, finishing with the streusel on the top.
- Bake in the oven for 55 - 65 minutes or until a knife or skewer comes out clean.
- Remove from the oven and let cool for at least 20 minutes before serving.
- Serve warm with coffee.

Notes
- To make homemade apple butter:
- Peel, core, and slice 5 lbs. of apples. Combine the apples with 1/2 cup sweetener of choice and 1 tsp. cinnamon in a slow cooker and cook on low for 8-10 hours or until the applesauce has thickened and darkened. Optionally, blend in a blender or with immersion blender about 5 hours in to make apple butter smoother. Sweeten to taste.
