Fresh Peach Galette

This delicious peach pastry is a crowd pleaser! It's perfect for a light and sweet breakfast or dessert and is so easy to make!

Ingredients

  • 3-4 fresh peaches (appx. 1-1.5 lbs.), thinly sliced 
  • 1 sheet puff pastry
  • 1/4 cup brown sugar, lightly packed
  • 2 tsp. cornstarch
  • 1/4 tsp salt
  • 1 tsp lemon zest
  • 1 tsp vanilla extract
  • 1-2 tbsp. coarse sugar (such as turbinado)
  • 1 tbsp. almond milk. for brushing

Instructions

  1. Clean and slice peaches. Leaving skin on is up to preference. 
  2. Combine peaches, sugar, cornstarch, salt, lemon zest, and vanilla extract in bowl. Set aside. 
  3. Roll out sheet of puff pastry into rough circular shape, dusting board with flour if necessary. 
  4. Add peach mixture to the middle of the puff pastry. 
  5. Fold sides of puff pastry towards center, without completely covering the peaches in the center and pinch gently to seal. 
  6. Transfer galette to baking sheet. 
  7. Brush plant milk on edges of galette and sprinkle coarse sugar on top. 
  8. Bake at 375 degrees Fahrenheit for 15-20 minutes, or until flaky, golden, and cooked through. 
  9. Remove from oven and let cool. Dust with powdered sugar if desired. Slice into desired portions. 
  10. Enjoy!
