Fresh Peach Galette
This delicious peach pastry is a crowd pleaser! It's perfect for a light and sweet breakfast or dessert and is so easy to make!
Ingredients
- 3-4 fresh peaches (appx. 1-1.5 lbs.), thinly sliced
- 1 sheet puff pastry
- 1/4 cup brown sugar, lightly packed
- 2 tsp. cornstarch
- 1/4 tsp salt
- 1 tsp lemon zest
- 1 tsp vanilla extract
- 1-2 tbsp. coarse sugar (such as turbinado)
- 1 tbsp. almond milk. for brushing

- Clean and slice peaches. Leaving skin on is up to preference.
- Combine peaches, sugar, cornstarch, salt, lemon zest, and vanilla extract in bowl. Set aside.
- Roll out sheet of puff pastry into rough circular shape, dusting board with flour if necessary.
- Add peach mixture to the middle of the puff pastry.
- Fold sides of puff pastry towards center, without completely covering the peaches in the center and pinch gently to seal.
- Transfer galette to baking sheet.
- Brush plant milk on edges of galette and sprinkle coarse sugar on top.
- Bake at 375 degrees Fahrenheit for 15-20 minutes, or until flaky, golden, and cooked through.
- Remove from oven and let cool. Dust with powdered sugar if desired. Slice into desired portions.
