Fruity & Fresh Mango Salsa

This mango salsa is the perfect combination of sweet, spicy, salty, and downright delicious! It's a perfect summer side that pairs perfectly with cauliflower tacos! (wink wink*)

Ingredients

  • 2 large ripe mangoes, cubed
  • 1 lime, juiced
  • 1/2 bell pepper, diced
  • 1/2 red onion, diced
  • 1 jalapeño, finely diced (seeds optional)
  • about 1/4 cup cilantro, destemmed and chopped finely
  • salt and pepper to taste

Instructions

  1. Chop and prepare mango, bell pepper, red onion, cilantro and jalapeño. Keep the seeds of the jalapeño if you like your salsa spicier. 
  2. Combine chopped ingredients with the juice of the lime and stir to combine. 
  3. Season to taste and chill for at least 30 minutes. 
  4. Serve cold on chips, tacos, and more!
  5. Enjoy!
