Fruity & Fresh Mango Salsa
This mango salsa is the perfect combination of sweet, spicy, salty, and downright delicious! It's a perfect summer side that pairs perfectly with cauliflower tacos! (wink wink*)

Ingredients
- 2 large ripe mangoes, cubed
- 1 lime, juiced
- 1/2 bell pepper, diced
- 1/2 red onion, diced
- 1 jalapeño, finely diced (seeds optional)
- about 1/4 cup cilantro, destemmed and chopped finely
- salt and pepper to taste
Instructions
- Chop and prepare mango, bell pepper, red onion, cilantro and jalapeño. Keep the seeds of the jalapeño if you like your salsa spicier.
- Combine chopped ingredients with the juice of the lime and stir to combine.
- Season to taste and chill for at least 30 minutes.
- Serve cold on chips, tacos, and more!
