Marble Banana Bread

This fun take on a classic banana bread is delicious and rich! The chocolate flavor marries perfectly with the sweet banana bread base, making this loaf a breakfast of champions!


Ingredients

  • 1 1/2 cups AP flour
  • 1 tbsp. baking powder
  • 1/4 tsp. salt
  • 3 large ripe bananas (appx. 2 1/2 cups), mashed
  • 1/3 cup vegan butter or vegetable oil
  • 3-4 tbsp. egg substitute (flax egg or Just Egg)
  • 1/2 cup sugar 
  • 1 tbsp. vanilla extract
  • 4 oz. hot coffee (can sub espresso powder + water)
  • 1/4 cup cocoa powder
  • 1/4 chocolate chips
  • optional mix ins: nuts, peanut butter, cinnamon

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. 
  2. Combine flour, baking powder, and salt in small bowl. 
  3. Mash bananas and set aside. 
  4. Combine melted vegan butter and sugar in large bowl. Whisk until combined fully. 
  5. Add egg substitute, vanilla extract, and mashed banana to sugar + oil mixture. Mix until combined. 
  6. Add dry ingredients to wet ingredients and stir until just combined. 
  7. In a separate bowl, combine cocoa powder and hot coffee. Whisk until no lumps remain. 
  8. Add half of the banana bread mixture from before and fold to combine. 
  9. Fold chocolate chips into chocolate mixture. 
  10. Grease and line loaf pan with parchment paper. 
  11. Alternate pouring chocolate and vanilla mixture into pan. 
  12. Take long object, such as a knife or skewer, and swirl around the batter in pan. 
  13. Place in preheated oven and bake for about 45 minutes- 1 hour, or until skewer comes out clean.
  14. Let cool for at least 20 minutes before slicing.
