Quick & Easy Greek Pasta Salad

This delicious and nutritious pasta salad is perfect and refreshing for the summer and only takes a few minutes to make!




Ingredients 

Makes enough for three generous servings or four regular servings
  • 2 cups / 224g dry pasta of choice (We used tricolor rotini)
  • Salt for the pasta water (optional)
  • 1/4 cup / 45g sliced Kalamata olives, drained
  • 1/2 bell pepper / 70g bell pepper, diced
  • 1/2 cucumber / 160g cucumber, diced or quartered
  • 1 cup / 160g cherry tomatoes, halved or quartered
  • 1 cup/185g cooked chickpeas, drained
  • 1/4 - 1/3 cup Italian dressing
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • 1/3 cup vegan feta (optional)
  • Salt and pepper to taste

  1. Chop all your veggies and set them aside. 
  2. Cook pasta and drain. 
  3. Drain your chickpeas and olives. 
  4. Combine vegetables and pasta in a large bowl.
  5. Drizzle in Italian seasoning to your desired amount. 
  6. Season with herbs to taste. 
  7. Serve with vegan feta crumbled on top. 
  8. Enjoy!
