Quick & Easy Greek Pasta Salad
This delicious and nutritious pasta salad is perfect and refreshing for the summer and only takes a few minutes to make!
Ingredients
Makes enough for three generous servings or four regular servings
- 2 cups / 224g dry pasta of choice (We used tricolor rotini)
- Salt for the pasta water (optional)
- 1/4 cup / 45g sliced Kalamata olives, drained
- 1/2 bell pepper / 70g bell pepper, diced
- 1/2 cucumber / 160g cucumber, diced or quartered
- 1 cup / 160g cherry tomatoes, halved or quartered
- 1 cup/185g cooked chickpeas, drained
- 1/4 - 1/3 cup Italian dressing
- 1/2 tsp thyme
- 1/2 tsp oregano
- 1/3 cup vegan feta (optional)
- Salt and pepper to taste

- Chop all your veggies and set them aside.
- Cook pasta and drain.
- Drain your chickpeas and olives.
- Combine vegetables and pasta in a large bowl.
- Drizzle in Italian seasoning to your desired amount.
- Season with herbs to taste.
- Serve with vegan feta crumbled on top.
- Enjoy!
