Banana Blueberry Whole Wheat Waffles

These waffles may be whole wheat, but they are so so delicious! Plus, they go great with all kinds of toppings, but more on that later!


Ingredients:

Inspired by the Blueberry Banana Pancake Recipe from Lighter World found: here
  • 1 3/4 cup whole wheat flour
  • 2 tbsps. baking powder
  • 2 tbsps. brown sugar
  • pinch of salt
  • 2 large ripe bananas, mashed
  • 2 1/4 cup plant milk
  • 1 tbsp. melted vegan butter (optional)
  • 1 cup blueberries

Instructions

  1. Combine the flour, baking powder, brown sugar, and salt in a large bowl by gently whisking. 
  2. In a separate smaller bowl, mash the bananas. 
  3. Pour the mashed bananas, melted butter, and plant milk into the bowl of the dry ingredients and whisk until combined. A few lumps remaining are okay. 
  4. Finally, fold in the blueberries to taste. 
  5. Preheat a waffle iron. 
  6. Pour about 1/2 cup to 3/4 cup waffle butter into the preheated waffle maker and let cook for about 5 minutes. 
  7. Remove from the waffle maker and serve warm with more blueberries, sliced banana, and syrup.
  8. Enjoy!

Variation:

  1. Cook the batter in a skillet to make some delicious pancakes!  Be sure to add the blueberries to the pancakes as they cook instead of to the batter to avoid blue/green batter. 
  2. Swap out the blueberries for your favorite pancake fix ins including chocolate chips, cinnamon swirl, or just plain fluffy waffles!
