Dinner Rolls

 These dinner rolls are seriously sinful! They're light, fluffy, and pair perfectly with so many dishes! Plus, they make great slider buns!

  • 7g / 1 tsp salt
  • 80g / 1/3 cup + 8g / 2 tsp sugar, divided
  • 14g / 1/2 oz yeast
  • 660g / 5 1/2 cups AP Flour
  • 1 1/2 cup plant milk
  • 1/2 cup warm, nearly hot water
  • 1 1/2 stick / 3/4 cup vegan butter, divided
  • 2 vegan eggs (We've used Bob's Red Mill Egg Replacer and JustEgg and they both work great)

Instructions

  1. Warm the water in a pot until it feels barely warm. It should feel about the temperature of warm bath water. While you wait, prepare the vegan egg if using a thickening egg replacer. 
  2. Add the yeast, warm water, and 2 tsps. of the sugar to a small bowl and stir to combine. Let that mixture sit for about 5 minutes. 
  3. In the same pot, warm the pot to about the same temperature as the water. 
  4. In a large mixing bowl, whisk together the flour, salt, and remaining sugar. Make a well in the center of the flour and pour in the vegan eggs, warm milk, and yeast mixture.
  5. Stir to combine and knead until the dough comes together. 
  6. Turn the dough out on to a lightly floured work surface and knead until the dough comes together. It should be very sticky, so make sure not to add too much flour. 
  7. Add 1/2 cup of the butter to the dough in tablespoon increments and knead until combined after each addition. In between adding the increments of butter, add in about 1 tbsp. of flour if the dough becomes too stick to work with. 
  8. When the dough is smooth and elastic, place in a greased bowl and rest for 1/2 an hour or until doubled in size. 
  9. After risen, punch the dough down and cut or weigh into 30 roughly equal pieces, about 45g or 1.5 ounces each. 
  10. Arrange the dough balls into a greased casserole dish or sheet tray approximately half an inch apart for slider rolls or touching each other for dinner rolls. 
  11. Cover with a damp towel and let rise for 1 1/2 hours. 
  12. Preheat an oven to 375. 
  13. Bake the rolls at 375 for about 25 minutes or until golden on top and firm to the touch. 
  14. Remove the rolls from the oven and allow to cool for about 5 minutes. 
  15. Melt 1/4 cup vegan butter and pour over the warm rolls. Top with flaky salt. Serve warm.
