Salted Caramel Rice Krispy Treats
Yummy, sticky, and oh-so-nostalgic! These caramel Rice Krispy treats are a crowd pleaser for kids and adults alike!
Ingredients
For the Caramel (Adapted from Six Vegan Sisters Caramel Recipe found: here
- 1/2 cup vegan butter
- 1 cup sugar (We used half Splenda)
- 3 tbsp. creamer
- 1/4 cup light corn syrup
- 1/4 tsp salt
For the Treats
- 4-6 cups Rice Krispy Cereal (Add less to make a chewier bar)
- 1 10 ounce package of vegan marshmallows (We use the Dandies brand mini marshmallows)
- About 1 cup vegan caramel + 1/4 cup for drizzling
- Flaky salt for the top
Instructions
- Melt the sugar in a large pot on a medium low heat. Whisk occasionally to ensure that no clumps remain. Do not overcook the sugar! This is not like regular caramel, so as soon as the sugar is completely melted, move on, otherwise, the caramel will taste burnt.
- Once the sugar is melted, add the vegan butter and mix constantly on a low or no heat until it is combined as much as you can. It will seem like the butter will not mix in, but continue to mix. Be careful not to whisk to vigorously because the butter and hot sugar can splash and burn your hands.
- Add the vegan creamer and corn syrup and slightly increase the heat. Continue to whisk until the sugar re-melts and combines with the butter and creamer. Again, be sure not to overcook the caramel, as it will burn. It is normal to have a few clumps of sugar at the bottom of the pot and do not worry too much about trying to melt them.
- Once the caramel is smooth and creamy, allow to cool for about 10 minutes. Once cooled reserve about 1/4 -1/2 cup.
- With the remaining caramel, begin reheating it over medium heat and add in the bag of mini marshmallows. Allow the caramel and marshmallows to melt completely before adding in the Rice Krispies to your taste.
- Once the cereal is incorporated, remove the pot from the heat and place the treats in a large heavily greased casserole dish. Spray your hands with cooking spray and press the treats into the pan. Try not to overpack them, as this makes a denser treat.
- Allow to cool for at least 20 minutes before cutting.
