Easy Single Serving Vegan Cinnamon Rolls

These single serving vegan cinnamon rolls are a quick and easy alternative to classic cinnamon rolls! They only take about 25 minutes from start to finish!


Ingredients

  • 1/2 cup Self Rising Flour
  • 1 tbsp. & 2 tsp. Brown Sugar, Separated
  • 1/4 tsp. Fine Salt
  • 3-4 tbsp. Plant Based Yogurt, Separated
  • 1 tbsp Vegan Butter, Softened
  • 1/2 tsp Ground Cinnamon
  • 2 tbsp Powdered Sugar
  • 1 tsp Almond Milk

Instructions

  1. Preheat the oven to 400 degrees. 
  2. In a medium bowl, combine the flour, 1 tsp brown sugar, salt, & 2-3 tbsp. of the plant based yogurt.
  3. Mix the ingredients together until a smooth dough forms.
  4. Dump the dough out on a lightly floured surface and roll it into a 4" by 6" rectangle
  5. Spread the vegan butter all over the surface of the dough
  6. sprinkle on the remaining brown sugar and the cinnamon & roll the 4" side into a log.
  7. Cut the dough into four sections and place into a greased ramekin, oven safe mug, or small baking dish.
  8. Pour the teaspoon of almond milk over the top of the cinnamon rolls.
  9. Place the dish into the oven and bake for 15-20 minutes until the center is completely set. 
  10. Let the dish cool for about 5 minutes.
  11. In a small bowl, mix together 1-2 tbsp of yogurt with the powdered sugar until completely smooth
  12. Pout the frosting overtop of the cinnamon rolls & Enjoy.
