Super Easy Jam Filled Shortbread Cookies
These vegan shortbread cookies only require a few ingredients and time, and look absolutely perfect.
Ingredients
- 1/2 cup Softened Vegan Butter
- 1/4 cup (31g) Powdered Sugar
- 1/2 tsp. Vanilla Extract
- 1/2 (3g) tsp Salt
- 1 cup (125g) All Purpose Flour
- 1/4 cup any flavor Jam or Preserves
Instructions
- In a medium sized mixing bowl, combine the softened butter and powdered sugar.
- Cream the butter and sugar on medium speed for 3-5 minutes until the mixture turns light and airy
- Add in the vanilla extract and salt and beat until fully incorporated.
- Slowly add in the sifted flour until a wet cookie dough forms.
- Scoop the dough into a sheet of plastic wrap and chill for a minimum of 45 minutes.
- Preheat the oven to 350 degrees
- Remove the dough from the fridge and, on a heavily floured worksurface, roll the dough into 1/8-1/4 " thick sheet.
- Using a small round or fluted cookie cutter, cut approximately 24 cookies out.
- Place the cookies onto a parchment lined baking sheet .
- In half of the cookies, cut a small hole or shape out in the center.
- Bake the cookies for 12-15 minutes until lightly golden.
- Let the cookies cool at room temperature for 5-10 minutes until cool to the touch.
- Turn all the cookies upside down, and pair all the cookies into duos with one uncut, and one with a hole.
- Spoon about one teaspoon of jam into the center of the cookies without a hole in the middle, and place the pair on top, with the flat side touching the jam.
- dust the tops with a light coat of powdered sugar.
