Cauliflower Tacos

These tacos are a hit! The cauliflower is perfectly smoky and spicy, you won't even miss the beef! Plus, they pair wonderfully with Mango Salsa or Salsa Verde!








Ingredients

  • 1 medium head of cauliflower
  • 2 tbsp. oil (We used grapeseed)
  • 1/2 tsp. salt
  • 1/2 tsp pepper
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp Old Bay Seasoning
  • 1/4 tsp cayenne pepper
  • 1/4 tsp MSG (optional)
  • 1 medium red onion, sliced
  • Tortillas
  • Salsa (We used our Mango Salsa)

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit. 
  2. Cut the core out and remove the leaves on the cauliflower. Clean. Cut the cauliflower into florets. 
  3. Toss the cauliflower florets in a bowl with the oil and seasonings until all the cauliflower is coated. 
  4. Spread the cauliflower out evenly on a lined baking sheet along with the onions. Bake at 425 for about 10 minutes before reducing the heat to 375 until the cauliflower is cooked through. 
  5. Remove the cauliflower and onions from the tray and serve on warm tortillas with your favorite taco toppings. 
  6. Enjoy!
