Cauliflower Tacos
These tacos are a hit! The cauliflower is perfectly smoky and spicy, you won't even miss the beef! Plus, they pair wonderfully with Mango Salsa or Salsa Verde!
Ingredients
- 1 medium head of cauliflower
- 2 tbsp. oil (We used grapeseed)
- 1/2 tsp. salt
- 1/2 tsp pepper
- 1 tsp smoked paprika
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp Old Bay Seasoning
- 1/4 tsp cayenne pepper
- 1/4 tsp MSG (optional)
- 1 medium red onion, sliced
- Tortillas
- Salsa (We used our Mango Salsa)
Instructions
- Preheat your oven to 425 degrees Fahrenheit.
- Cut the core out and remove the leaves on the cauliflower. Clean. Cut the cauliflower into florets.
- Toss the cauliflower florets in a bowl with the oil and seasonings until all the cauliflower is coated.
- Spread the cauliflower out evenly on a lined baking sheet along with the onions. Bake at 425 for about 10 minutes before reducing the heat to 375 until the cauliflower is cooked through.
- Remove the cauliflower and onions from the tray and serve on warm tortillas with your favorite taco toppings.
